Neapolitan Cake


Tonight I made a cake that I got to try: this neapolitan cake that I made for a birthday dinner that we hosted. The cake is fairly narrow, at 6" wide, since it was only meant to feed 4, but there was tons leftover because it is over 5" tall! The cake itself is layers of strawberry, chocolate and vanilla cake with homemade strawberry jam between the layers and covered with a very light and fluffy chocolate swiss meringue buttercream icing. This cake looks like an unassuming chocolate cake from the outside, but when we cut into the birthday boy was surprised (and excited) to see the fun flavours inside!

Hot Fudge 'Sundaes'


Cupcakes disguised as hot fudge sundaes! These are chocolate cupcakes filled with a rich chocolate ganache, topped with vanilla buttercream, more chocolate ganache, rainbow sprinkles and a cherry on top. Destined for a birthday party for an 11-year-old with these cupcakes, who needs ice cream!

Cupcake Duo

I love making cupcakes and am always looking for reasons to try out new recipes and flavour combinations. I was recently asked to make some cupcakes for a colleague's birthday and happily obliged. I decided to make two flavours, since there a couple people at my office who can't eat dairy.

The first is a banana caramel cupcake - fluffy banana cake topped with caramel buttercream, caramel drizzle and a chocolate-dipped banana chip.


The second cupcake is a dairy-free (and egg free) coconut-chocolate cake with dairy-free chocolate frosting and coconut sprinkled on top.

Angry Birds Cake


I made this cake for a friend's surprise 30th birthday party: he loves the angry birds iPhone app and we thought that this would be the perfect theme for a cake for him. The cake itself is cookies n'cream covered with plain and chocolate fondant. The angry birds figures are hand crafted out of fondant and completely edible.


This was such a fun cake to make, and was enjoyed all around!

Specialty Cakes


Custom cakes add such a nice touch to any occasion. This cake was made for a birthday party where they were serving Coors 55 packs that you can get at Costcos in Quebec. The cake itself is an 8" across, 10" high butter cake with chocolate filling and vanilla buttercream (tinted grey/silver) frosting. The coors logos and writing are royal icing.

  

This next cake is a gluten-free chocolate cake in the shape of a sunflower. The birthday girl was so excited to be able to actually eat her birthday cake! The cake is approximately 10" diameter with chocolate and vanilla (tinted yellow) buttercream frosting.

More Baby Shower Cakes

Here are a couple of cakes I've made for different baby showers. The first is more traditional, cute and definitely for a girl. It's a 12" round white butter cake with raspberry filling and vanilla buttercream covered in fondant with fondant cake toppers.


This next cake was for a baby shower where one parent was an Ottawa Senators fan and the other a Montreal Canadiens fan. They asked me for a cake that expressed this. The result was a mash up of the two teams on a cake, with a baby peeking over the side. The text on the cake translates to "Which one will he choose?". The cake is a 12" round choclate with choclate fudge filling and vanilla swiss meringue buttercream covered with fondant and royal icing hand-drawn logos and baby.

Engagement Party Cupcakes

One of my closest friends recently got engaged. Her engagement party was last weekend, and all of us bridesmaids helped out with different parts of the party planning and set up. As part of my gift I set up a couple of cupcake towers for dessert for the party. I made her custom cupcake towers (in her colours of choice) and filled them up with yummy cupcakes topped with home-made gum paste flowers topped with a little shimmer of luster dust.

The white cupcakes are chocolate cake with salted caramel filling and topped with a simple vanilla buttercream. The pink cupcakes are vanilla cake filled with vanilla bean pastry cream and topped with vanilla swiss meringue buttercream. Making the first cupcake stand was a time-consuming process but once I had the method figured out the second one came together in a snap.
